Travelling to Porto from Canada:

From Toronto there are direct flights on Air Transat to Porto (three times a week). There is a direct flight to Porto on SATA once a week or a connection via Lisbon on other days.

Air Canada and Lufthansa have daily flights from Toronto, Ottawa, Montreal, Calgary and Vancouver to Frankfurt and from here there are connecting flights to Porto
 

Departing from Santiago:
From Santiago de Compostela there are direct buses (about 3 hours) to return to Porto. 
OR
From Santiago it is possible to fly or take a train to Madrid and from there fly to Canada on Lufthansa or Air Canada.
